My new project!

I am a little bit of a hoarder when it comes to food... I tend to buy thing when they are on sale, which isn't a bad thing because the idea is to save us money. However, I buy and buy and I seldom use :) So I've decided to try and clean out my pantry and I've issued myself a challenge... to use as many pantry items in each recipe without buying anything new from the store.
I started last night :)

(and yes, this means no Emma pictures this post!)

My very well stocked pantry

The ingredients I decided to use

My finished product!

I have a ton of cans of tuna, so I decided to start there. I also have a ton of cans of tomatoes. I found some spinach pasta, knew I had mozzarella in the fridge and decided to throw together a mediterranean type pasta.

1/2 lb pasta

1 clove garlic, minced

1 can of tomatoes, diced (you could also use crushed)

a handful of pepperoncini peppers, minced (you can use more or less depending on how hot you want your dish, I removed the seeds)

1 can of tuna, drained

1/2 c of mozzarella, diced

a handful of basil, chopped

pine nuts

Cook the pasta according to the directions. While the pasta is cooking heat a splash of olive oil in a pan and saute the garlic for 30 seconds. Then add the pepperoncini and the tomatoes, and simmer until the pasta is done. When the pasta is done drain it and add it to the tomatoes (or add the tomatoes to the pasta, depending on what will fit in each pan). Add the tuna, mozzarella and basil and toss. Sprinkle with pine nuts and serve.

I think the dish turned out great and Jamie LOVED it. The flavor combo was very reminiscent of some sandwiches we had in Spain, it had a nice kick and the mozzarella melted to googy goodness :) I'll definitely make it again :)

I am a hoarder myself. I think I will follow in your footsteps and try to use what we have rather than keep buying...

Fellow food hoarder here. It's very expensive to be a food hoarder when you move with NO food (as you know) and move into a house with empty cabinets. How many freaking bags of pasta do we need? Great idea. Food hoarding to end (except with ice cream).
